I won't lie! (confessional)

I can't lie, I am depressed. The skies are gray and I am sad that my neighbors are moving. We have had many fun times with them and their son is our son's best friend. They both love Harry Potter. I am having a hard time being happy for them but I wish them the best. I hope Ethan will be OK, they are moving to about an hour away if all goes right.
On the other hand I am really loving trying more vegetarian recipes. Most all seem to taste great!I don't think we will stop eating meat altogether but I think we will go to one or two meat dishes a week. Maybe eventually we can be all veggie. It seems much more exciting to eat this way then to always plan dishes around so few things, I mean there is only so few ways to cook chicken! I have to admit that tonight is more chicken to eat leftover from Sunday. Chicken pot pie with lots of veggies.
